The rafting bit :) . Not saying that you couldn't be an excellent athlete, but landing a visa for professional rafting is much more challenging than landing one for a techjob

Fun fact- there are workarounds for the hospitality sector. I met someone who used to work with hotels, and their immigration was quite different
